HOW TO PICK A PEACH

For yellow peach varieties, look for fruit with a golden undertone that is slightly soft to the touch.   There is no need to squeeze them hard!   For white peaches, the undertone should be a creamy yellow.   Nectarines should be a deep, dark red/orange. The more red, the sweeter and softer it is likely to be.   Firm fruit that has the proper color will ripen in a few days at room temperature.   Do not pick green fruit!   It won't ripen satisfactorily.
